Re: elderberry berry recipes
Wed, August 27, 2008 - 8:31 PMThe seeds contain cyanide glycosides which are disspated upon cooking. So if they are cooked there is not a problem. Also if you ate a few berries and did not chew the seeds they would pass right through and not cause a problem.
Blessings

Re: elderberry berry recipes
Tue, September 2, 2008 - 7:32 PMYes that is true. Some members of the elderberry family can cause nauseau or worse. The roots are often poisonous. Elderberry is in the Sambucus family of which there are many species. Research which one(s) you are working with.
p.s. I love Elderberries! ; )

Thu, August 28, 2008 - 11:55 PMIt's funny I JUST got done making some elderberry jam a few moments ago!
Meanwhile the airlocked vessel of elderberry wine if bubbling away.
www.justberryrecipes.com/ber-0...0.html for the jam (I halved the recipe and used a cup of blackberries instead of elder and added a dash of clove YUM)
And for the wine I used: www.grapestompers.com/recipes.htm
Time will tell how that one turns out! -

Re: elderberry berry recipes
Tue, September 2, 2008 - 1:48 PMYeah the red elberries you don't want to eat fresh. I dried them in the sun, and am now infusing them with elecampane in brandy which I will make a cordial/elixir from in a few months for winter colds. -

Re: elderberry berry recipes
Sat, September 13, 2008 - 12:15 AMI had horrible nausea and vomiting from eating dried, blue elderberries that I was moawing down on, and chewing the seeds. It lasted till i went to sleep 5 hrs later and I felt somewhat OK in the morning.
That being said, just 3 days ago I noticed a elderberry bush growing next to a campfire. I simply cut the stem below the berries, put them on a stick and roasted them till they started to drip. I ate tons of them, till my teeth got tired of it (think: eating lemons feeling), to test the "cooking them makes them ok" theory and it worked! People around the fire even tried a little.
